Hai!! Okay so one of my favorite restaurants in Scottsdale is The Herb Box.
I ALSO HAVE A PLACE IN MY HEART FOR THIS SPOT–ADAM PROPOSED NEARBY OVER THE CANAL IN OLD TOWN SCOTTSDALE AND THEN WE HAD LUNCH THERE WITH MY PARENTS!
It’s like my go-to place to bring out of town guests, have a business dinner, or just to meet friends for lunch! Oh yea–and I was here the day after my bachelorette party for brunch with Kate, too. Remember?
THEY’VE GOT HEALTHY, FRESH, AND TRENDY DISHES, A GREAT BRUNCH, IN A GREAT LOCATION! THEY TOP IT ALL OFF WITH FANTASTIC DECOR AND A BEAUTIFUL ATMOSPHERE. THE PRICE IS REALLY RIGHT, TOO!
I was there not too long ago with my friend, Courtney. We both could not decide between the smoked salmon hash and the brie, kale, and green apple omelette, so we got both and split ’em!
Now, if you’re thinking, “Hmm–brie, kale, and green apples, in an omelette!? WEIRD!” THINK. AGAIN.
Easy, fresh, and satisfying. It is the most genius combination, ever. #Trust.
Here’s how you can make your own at home!
Grab a handful of kale and chop into small bits.
In a small omelette pan, sauté kale bits in a small amount of coconut oil (2 teaspoons, maybe?)
Once the kale is soft, lightly beat two eggs and add to the pan.
Cover. While eggs are setting, grab a wedge of brie cheese and cut off the wax portion.
Once eggs are set, add strips of brie and cover once more.
While the brie is melting, cut half of a green apple into matchstick slices.
Once the brie is melted, place the apple slices on top! Season with salt and pepper (freshly cracked, okay? Capeesh.)
Fold your omelette.
And there it is. #Bacon.
